Late August is the end of peach season in North Carolina. I have a friend who is really into pick your own (PYO) fruit. Seriously, she loves strawberry, apple and apparently peach picking.
Luckily, for me, I get some of the abundant fruit she picks. A couple of days ago she dropped of some preaches. My son suggested that we make Peach Bread…. and that is what we did.
Homemade Peach Bread
Ingredients for Peach Bread
2 cups white sugar
2 teaspoons vanilla extract
1 cup vegetable oil
2 cups diced peaches
3 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon salt
1 teaspoon baking soda
3 teaspoons ground cinnamon
1. Preheat oven to 350 degrees F.
2. Grease two 8 x 4 inch loaf pans or one bundt cake pan
3. In a large bowl, beat the eggs lightly. Blend in the sugar, oil, and vanilla. Add flour, baking powder, baking soda, salt, and cinnamon; mix just to combine. Stir in the peaches. Pour batter into pan..
4. Bake for about 1 hour, or until a toothpick inserted in the center comes out clean.
